Homemade Cauliflower and Chickpea Curry.
Really simple and tasty.
Cut 1 large to medium cauliflower into florets. Put in pot and cover with water and boil. Take off straight away and drain.
Heat oil in a large saucepan over medium heat add onions, garlic and ginger and sauté for about 10 minutes. Add ground coriander, cumin, chilli flakes and some salt and pepper cook for another 5 minutes.
Add tomatoes with their juice and chickpeas. Then add cauliflower. Add some water to almost cover ingredients but not quite cover everything.simmer for 5 to 10 minutes.
Finally stir in garam masala and half a chopped coriander. Serve with Rice.

2 tablespoons of sunflower oil
3 chopped onions
4 cloves of garlic
1 teaspoon of grated ginger
2 teaspoons of ground ginger
2 teaspoons of ground cumin
1 large pinch of fried chilli flakes
1 x tin of tomatoes
1x tin of chickpeas
2 teaspoons of garam masala
1 x goof handful of chopped coriander
Sea salt and black pepper.
